If you’re planning to fix the traditional meal of corned beef and cabbage for St. Patrick’s Day, consider cutting back on the beef and fixing a larger helping of accompanying vegetables. Replacing one pound of corned beef with one pound of potatoes will not only save you a couple of dollars, but your purchase will also help to save land, water, and energy, as the resources used to make a pound of beef are hundreds of times higher than those to make a pound of potatoes.

If every U.S. household replaced one pound of beef per year with a pound of potatoes, carrots, or other vegetables, we could save up to 195 billion gallons of water per year.

Did You Know…?

Americans consume more than 42 billion pounds of beef per year.

Roughly 1,950 gallons of water are required to produce one pound of beef. One pound of potatoes requires just 65 gallons of water.
